Snacking with Mikey

Turn up the volume! 🎙️

This week, I’m introducing something new that I think you’ll love – my brand-new podcast, Bite-Sized Chats! I’ll be diving into fun, casual food conversations with special guests who like talkin’ snacks. These episodes will be short and sweet, just like me and Sabrina Carpenter. 💋 For the first episode, I invited my brother Mikey to join me in reminiscing about our favorite snacks growing up. You’ll find these chats popping up periodically in the newsletter. So, give it a listen and let me know what childhood snack you remember loving!

Orecchiette with Bacon, Snap Peas and Ricotta by Molly Baz

from her book, Cook This Book

This pasta dish has the charm of a carbonara with a cacio e pepe attitude. Imagine a creamy sauce made up of rendered bacon fat, starchy pasta water, and generous handfuls of parm, all clinging to the pocket-sized orecchiette. (In a world ruled by spaghetti and penne, orecchiette deserves way more love!) The snap peas bring a fresh crunch to each bite and a dollop of ricotta ties it all together. A very nice weekday meal!

Broccoli and Cheese Galette by Sohla El-Waylly

from her book, Start Here

I think we can all agree that covered in cheese is the best way to eat broccoli. This galette is an elevated version of a childhood pairing. It's a thick cheese sauce topped with charred broccoli and wrapped in a cheese-speckled pastry that is basically an extra flaky Cheez-It. This could easily be simplified by using store-bought pie crust or puff pastry, but I'm an overachiever. This is officially on the “make again” list!

Salted Halva Blondies by Claire Saffitz

from her book, Dessert Person

I do not like blondies. In fact, I would go as far as to say that I despise them. They’re not as satisfying as a mediocre cookie nor as indulgent as a brownie. For me, it was just a chewy reminder of how much I’d rather be eating a brownie. That being said, I love sesame and I was willing to give these a try becuase Claire’s recipes rarely let me down. No shade to Claire (or to blondie lovers), but let's just say these did not win me over…

On the Backburner

Here is what I have planned for next week. Feel free to cook along and let me know what you think!

Thanks for reading, sweeties! 🍎
