I love affogato. Espresso and vanilla ice cream? A match made in heaven. So I was definitely intrigued by these inverted affogatos (pg. 294). This recipe was a good example of why you should always follow my tips for using a recipe. I skimmed the recipe (oops) and ended up putting all the egg yolks listed in the ingredient list instead of holding some for the vanilla whipped topping. (Seriously, put it in a seperate ingredient list!) Luckily, it didn’t affect the custard too much. Hey, more protien!!
Since the custard above required eight egg yolks (in this economy?!), I saved the egg whites to make these meringue cookies from Claire’s YouTube channel. This video isn’t exactly a step-by-step, which I realized about halfway through, but I still think they turned out alright. I swirled in black sesame seeds because I love the toasty flavor it brings to sweet things.
Now back to the book! I just had to make these phyllo pinwheel cookies (pg. 186) before the week was over. This is a great cookie if you need a quick yet impressive cookie in a pinch. A cookie emergency, if you will. It takes just three ingredients: phyllo dough, butter and sugar. Roll it all together and boom, a crispy, caramelly, eat-over-the-sink cookie!
