What a week! I’m honestly surprised I even had time to make scrambled eggs (see below). The week began with a surprise birthday bash in Galveston, which we pulled off flawlessly. ✨💅🏻 The first night we all had dinner at Shrimp ‘n’ Stuff, a low-key Galveston staple that serves freshly caught and battered seafood. I got the fried catfish (one of my top 5 favorite foods) with hushpuppies and spicy boiled potatoes. The next day we spent down at the beach with coolers filled with homemade sandwiches, cowboy caviar (TikTok’s latest craze), and hard seltzers of every variety. Then for dinner that night, it was requested we go to Rainforest Cafe.
Back in the 90s, every kid wanted to go to Rainforest Cafe. They were always tucked in the corner of a mall and you could hear the animatronic elephants trumpeting in the distance as you begged your mom for a Limited Too tee. If you have ever wondered what it would be like to eat spinach artichoke dip with monkeys screeching above you, it’s one of the few establishments in the world that can offer that experience.
We were going for irony, but I’m not going to lie, I was legitimately in awe. I didn’t realize that the Galveston location is the most unique Rainforest Cafe in the world! (Now I’ve heard everything.) Not only is it surrounded by waterfalls with a full-on Build-a-Bear workshop inside, but there is also a theme park ride that runs right next to the restaurant! If you’re ever in the Galveston area, I say come for the $7 Rainforest Adventure Ride but stay for the sparkling volcano cake.

The fluffy parmesan scramble (pg. 83) was a delicious start to my weekend. I know, I know…it’s scrambled eggs. But if it’s significant enough for someone to put in a cookbook, I figure it’s worth a try. Plus, I had never considered putting parmesan on eggs. I’m a sharp cheddar gal!!
Scrambled eggs are something I thought I hated for years. Turns out, I just hated the way people around me made them. It’s incredible how something so delicious can turn absolutely vile if left on the pan for a single second longer than it should. Then I discovered this video of Gordon Ramsay scrambling eggs, which literally changed my life. His simple technique for soft, fluffy scrambled eggs has been my go-to for years. With a piece of sourdough and some bacon, it’s my perfect breakfast. Andy’s technique for fluffy scrambled eggs is even easier than Gordon’s. (No taking on and off the heat, less whisking.) This may be my new breakfast go-to! I added slices of prochuitto in replace of bacon here to appear more ~elevated~.
To be fair, the chickpea cacio e pepe (pg. 226) is very similar to the pasta dish I made last week. But…this one has chickpeas! I really enjoyed the addition of chickpeas. Mainly because I could convince myself it was healthier. C’mon protien!
