My perfect day would go as follows; I wake up with absolutely no agenda. I make myself an iced matcha latte with oat milk and walk my dog, Maisie, for at least a mile while I listen to I Wanna Be Bad by Willa Ford on repeat. (In this fantasy, Maisie does not whine at me to go home after two blocks and my AirPods connect to my phone perfectly on the first try!!) After my walk, I get a text from a friend to go to lunch. I order a giant margarita - preferably spicy - and queso for us to share. While on this lunch, my friend will share the most jaw-dropping gossip I have ever heard. We will laugh so hard we’re about to pee our pants. (But we don’t!) When we leave the lunch we will be feeling so inspired by each other. Once back at home, I catch up on my favorite shows. By 10:30, I fall asleep in the most comfortable position, ready to have the most magical dreams. 🌈✨🦄💕
Okay, but seriously though, is there anything better than catching up with friends over queso and margs?! This week, a friend and I grabbed dinner at Cantina Loca where we ordered the green chili queso, ceviche, a few tacos and the doraditos. (Fried tacos with cheesy potatoes? Sign me up!) And for dessert - because you know I always get dessert - the passion fruit tart.
August Cookbook: The Cook You Want to Be: Everyday Recipes to Impress by Andy Baraghani
I didn’t get to try as many recipes from Andy’s book as I wanted this week but I did manage to make the broccolini with warm anchovy dressing (pg. 192). I really enjoyed this, but I’m a sucker for anchovies. If anchovies scare you, grow up (jkjkjk!) – no, but you should still give this a try. Once they disintegrate into the oil, you won’t even have to think about them being in there!
Another one of my favorite Andy recipes from his Bon Appetit days is the turmeric salmon with coconut crisp. I like to make this every few months or so and it may be because I love snacking on the leftover coconut crisps. This time, however, I will be saving some for Andy’s cauliflower with coconut crisp (pg. 191).
