April Cookbook: Sweet Enough: A Dessert Cookbook by Alison Roman
I didn’t get a chance to cook much last week, but I found some free time on Sunday to make something simple like this chocolate-sour cream pound cake (pg. 133). If you’re a chocolate lover, this one is for you! It was a little too rich for my taste, but the cake was moist and it came together very easily. I loved the crunchy demerara sugar on top! I nibbled on a few pieces, but ultimately gave most of this away to neighbors and co-workers.
Not exactly a dessert, but this creamy cauliflower galette (pg. 81) sounded too good to pass up. It actually reminds me of Alison’s cauliflower and onion gratin from her book Nothing Fancy, which I loved. I was able to make the whole wheat pie dough (pg. 281) one night and then finish the galette the next day for lunch…and y’all, it’s so good. It’s basically like a flaky, deep dish cauliflower pizza. It’s perfection. Just look at that toasty cheese on top!!
When it comes to breakfast, I prefer to go savory. I rarely crave pancakes or waffles, but a photo of Alison’s perfect waffles (pg. 263) with crème fraîche and chopped chives caught my attention. So on Saturday morning I dusted off my fancy waffle iron and got to work. I bought this waffle iron at a closing Sur La Table for a crazy low price since it was one of their displays. This was years ago and it has traveled with me from apartment to apartment, being extremely inconvient to store ever since. But now was it’s time to shine!
Nothing too fancy, but this is a great blank canvas for experimenting with your next pancake or waffle. This created quite a bit of batter so I decided to split it in half and add some chocolate chips to one for a sweet companion.
Thanks for reading, sweeties! 🍎
