What would be your last meal? For me, it would be fried catfish with double servings of fried okra (with ranch for dipping, of course), crispy brussels sprouts, a large iced tea, and for dessert, two scoops of Bluebell vanilla bean ice cream topped with my mom’s hot fudge sauce.
I’m pretty sure my family did not invent melting butter, sugar and cocoa powder and putting it on ice cream, but still. This hot fudge sauce has been a favorite of my moms for years. I still get excited when I visit her and there’s a pot of this on her stovetop.
My mom recently told me that this recipe was intended to be the frosting for a salad dressing (mayonnaise) chocolate cake. We just chose to put it on ice cream instead. 🤷🏻♀️
Hot Fudge Sauce
1/2 C unsalted butter
1/4 C whole milk
1 C granulated sugar
2 Tbl cocoa powder
1 tsp vanilla extract
a dash of kosher saltPlace the butter, milk, sugar and cocoa powder in a saucepan over medium heat. Mix just until incorporated then bring to a boil. Let the mixture boil for 2 minutes untouched. (Seriously, do not stir!) Remove from heat and add vanilla and salt. Whip together until it thickens. For a thicker consistency, whip over a bowl of ice water.
This sauce can easily be reheated and, in our opinion, tastes better the second day. Pour a generous amount on vanilla ice cream and top with chopped pecans.

Also, besides the "definitely don't stir it", it does have to be whole milk. I don't think the skim milk sets up right.
